Spaghetti with Rocket and Smoked Salmon May 14, 2012

This is really quick and easy to make. I couldn’t resist messing with the recipe, but I think my additions work 🙂 I took the recipe from Easy Health magazine from Jan/Feb. I’ll definitely give this one a go again.

Serves 4

Ingredients

250g wholewheat spaghetti

1 large onion

1 clove of garlic, minced

120g smoked salmon, cut into fine strips

300g mixed wild rocket and flat-leaved parsley

A little olive oil

Juice of 1/2 lemon

Sea salt and freshly-ground black pepper

Parmesan

40g frozen peas

Handful toasted pine nuts

 

Method

1. Cook the spaghetti until al dente. While the pasta is cooking, heat the oil in a pan. Fry off the onion for 2 minutes. Add the garlic and fry for another 2 minutes.

2. Add the peas and heat through.

3. On a separate pan (dry), add the pine nuts and toast them.

4. Drain the spaghetti, combine with the salmon, rocket & parsley, add a dash of olive oil and lemon juice to the onions, garlic and peas and return to the heat for a minute or two stirring

5. Sprinkle with sea salt and lots of black pepper and serve, garnish with parmesan and toasted pine nuts.

 

Italian Pork Bolognaise with Spaghetti February 13, 2012

I tried this recipe tonight as I thought the picture in the booklet looked nice. It’s a recipe from the Weight Watchers- Filling and Healthy Day booklet. I’ll be straight with you there wasn’t a whole of flavour in it, so I added some liquid stock and some tomato relish along the way to give it a bit of umph!

There’s no propoints for this recipe, it’s one from the new plan where you can just choose foods from the filling and healthy list. They also didn’t include the quantities for this recipe so I have added my guesstimates below.

Serves roughly 4

Ingredients

500g pork mince meat

1 onion, finely chopped

1 carrot, diced

1 celery stick, diced

2 garlic cloves, crushed

1 can tinned tomatoes

1 tsp healthy oil

1 tsp chopped fresh rosemary

1 tsp chopped fresh thyme

2 tsp liquid stock

3 tsp tomato relish

Salt and pepper

 

Method

1. Fry extra lean pork mince with the oil.

2. Add diced onion, carrot, and celery.

3. Stir in the garlic, rosemary and thyme

4. Add the tin of chopped tomatoes, relish, and stock and simmer until reduced and thick.

Serve with cooked wholemeal pasta and a green salad dressed with lemon juice.

 

 

Spaghetti with Bacon Breadcrumb Topping September 6, 2010

I was watching Rick Stein’s cookery programme at the weekend and he was in Sicily. He made a very simple pasta dish. I have taken his recipe a step further. I think it’s great, but then again I am biased 🙂

 

Ingredients

150g spaghetti

15 olives, finely chopped

2 cloves garlic, crushed

1 red pepper, diced

1 tray of cherry tomatoes, pith removed and diced

50g breadcrumbs

50g grated parmesan

5 medallions (100g) smoked rasher

1 tsp Italian seasoning

1 tsp of chilli flakes

2 tbsp olive oil

Cooking spray

Salt and freshly ground pepper

Method

  1. Cook the spaghetti according to the packet instructions.
  2. Meanwhile, heat a pan and spray with cooking spray. Fry the bacon for 3 minutes until turning brown. Add the breadcrumbs and Italian seasoning and cook for another 2 minutes. Add in the parmesan, stir and set aside.
  3. Heat an additional large pan and add the olive oil. Fry the pepper for 3 minutes, add the garlic and olives and fry for another 2 minutes. Add in the tomatoes, chilli flakes and season with pepper. Cook for a further 2 minutes until the tomatoes are heated through.
  4. Drain the pasta and add to the large saucepan with the tomato and olive mix. Stir through and cook for another 3 minutes.
  5. Distribute into large serving bowls and sprinkle with the breadcrumb mixture.
