4 chicken breasts, skinless and boneless
2 tbsp clear honey
Juice of 3 limes
1 tbsp Dijon mustard
2 tsp paprika
Salt and freshly ground black pepper
1 tbsp olive oil
6 tbsp fresh herbs (e.g. parsley, chives, mint and coriander, chopped)
2 tomatoes, finely chopped
Juice of 1 lemon
- Cut the chicken into bite sized pieces and place in a bowl with the honey, lime juice, Dijon mustard and paprika. Season well and allow to marinade for at least 15 minutes.
- Meanwhile, prepare the couscous by placing in a bowl and pouring over 250ml boiling water and the olive oil. Cover and allow to stand for 20-30 minutes, fluffing the grains with a fork halfway through. Add the chopped herbs, tomatoes and the lemon juice. Season well and set aside.
- Place chicken on a grill rack under a medium-hot grill and cook for 3-4 minutes on each side until it’s cooked. Serve chicken immediately with couscous.
